Thick Lentil Veggie Stew (Makes About 2 Cups)
1/4 teaspoon Dried Onion
1/4 cup Dehydrated Carrots
1/4 cup Dehydrated Peas
1/4 cup Dehydrated Green Beans
1/4 cup Dehydrated (not just dried) Lentils
1 teaspoon oregano
16 oz Hot Water
1/2 package Idahoan Four Cheese Mashed Potatoes*
Salt & pepper to taste
At Home: Combine onion, carrots, peas, green beans, lentils and oregano in a small Ziplock® bag.
At Camp: Pour contents of zip bag into a large pot and add 16 oz of hot water. Stir, cover and put into a pot cozy for 10-15 minutes. Check peas for doneness (they will take the longest to rehydrate). Once veggies are to your desired tenderness add the mashed potato mixture, salt and pepper to your tastes, stir and enjoy!
*Note: Add more or less mashed potato mixture depending how thick you want your stew. |
